Winter Squash Salad


• 2 cups butternut or buttercup squash – peeled, cubed, steamed until
tender and kept warm
• 3/4 cup canned black beans – rinsed and drained
• 1/4 cup red onion – minced
• 1 clove garlic - minced
• 1 tbsp fresh parsley - chopped
• Olive oil – 1 tbsp or to taste

Step 1: In a mixing bowl, combine all the salad ingredients and toss gently being careful not to break the squash too much. Adjust the olive oil to taste if needed.
Step 2: Season with salt and pepper to taste.

Optional Additions: Try adding some crispy cooked and crumbled bacon (regular or vegetarian style) or some chopped roasted red peppers.

Lemon Dill Potato Salad


• 4 medium sized red potatoes – cut into 1 inch pieces
• 1/2 cup celery – sliced thinly
• 1/4 cup red radishes – thinly sliced half-moons
• 1/2 cup low-fat sour cream
• 1 tbsp fresh squeezed lemon juice
• 1 tbsp fresh dill (finely minced) or 1 tsp dried

Step 1: Steam potatoes for 7 to 10 minutes until tender and place in a covered bowl to keep warm.
Step 2: In a smaller bowl, combine the sour cream, lemon juice, and dill, mixing until well combined.
Step 3: Add the celery, radishes and sour cream mixture to the bowl of warm potatoes and toss to combine completely.
Step 4: Season with salt and pepper to taste.

Ginger Apple Fruit Salad


• 1 large apple – cored and cut into large dice
• 1/2 large grapefruit – peeled, seeded, sectioned,
and cut into pieces
• 1/2 avocado – peeled, pit removed, and cut into
medium-sized chunks
• Fresh grated ginger – to taste
• Bibb lettuce leaves

Step 1: In a bowl, combine the apple, grapefruit, and avocado.
Step 2: With a grater, grate the ginger over the salad ingredients and toss to combine. Start with a little and adjust to taste.
Step 3: Arrange lettuce leaves on each plate and mound the salad on top of the lettuce in the center of the leaves.

Optional Additions: Try adding some pecan or walnut pieces for a little crunch and added flavor.

Warm Tuna and Couscous Salad


• 1 cup dry couscous – prepared according to package directions
• 1 (6oz) can of water-packed tuna - drained
• 1/2 cup mushrooms - sliced
• 1/4 tsp dry or 1 tbsp (finely minced) fresh basil
• 2 tbsp olive oil
• 1 tbsp fresh squeezed lemon juice

Step 1: Prepare couscous according to package directions and keep warm.
Step 2: In a mixing bowl, combine the tuna, mushrooms, basil, olive oil, and lemon juice and combine well.
Step 3: Add the warm couscous to the salad ingredients and toss again to combine completely. Serve salad immediately while still warm.

Step 1: Place all ingredients in a mixing bowl and combine well.
