Grilled Chicken and Goat Cheese Salad


• 2 cups grilled chicken - cubed
• 1 medium apple - cored and diced
• 1/2 cup sliced water chestnuts – cut each slice in half
• 1/2 cup crumbled goat cheese
• 1 tbsp fresh cilantro – finely chopped

Step 1: Place all the ingredients in a mixing bowl and toss to combine well.

- Serve this quick winter salad recipe over avocado or mango slices with breadsticks on the side.

Creamy Pesto Potato Salad


• 4 medium sized red potatoes – cut into 1 inch pieces
• 1 1/2 cups packaged broccoli slaw mix
• 1/4 cup pitted black olives - chopped
• 2 tbsp cashew pieces
• 3/4 cup low-fat or non-fat plain yogurt
• 1 tbsp prepared basil pesto

Step 1: Steam potatoes for 7 to 10 minutes until tender and immerse in cold water to cool and stop the cooking process, Drain and place in a mixing bowl.
Step 2: Add the broccoli slaw, olives, and cashews to the potatoes.
Step 3: In a small bowl, combine the yogurt and pesto and mix well.
Step 4: Combine the yogurt mixture with the potato mixture and mix completely.

Optional Additions: Try adding some lemon zest or marinated artichoke hearts (drained and chopped) or sun-dried tomatoes in oil (drained and chopped) to this easy winter salad recipe for a little flavor boost.

• 3 medium kiwis – peeled and quartered
• 1 medium pear – cored and cut into chunks
• 1/4 cup cashew pieces
• 2 tbsp blue cheese - crumbled
• Bibb lettuce – as needed

Step 1: Place the fruit, nuts, and cheese in a bowl and toss gently to combine. Serve salad immediately.

Step 1: In a bowl, combine the pasta, apples, salmon, and dill and toss to combine.
Step 2: Add the oil and lemon juice and season with some fresh ground pepper, if desired, and toss to combine completely.

Chicken and Squash Salad


• 2 cups grilled chicken - cubed
• 1 cup snow peas
• 1/2 cup chayote squash – small dice
• 1/2 cup cabbage - shredded
• 1/4 cup scallions – finely diced
• 2 tbsp fresh squeezed lemon juice
• Oyster sauce – to taste

Step 1: Steam the snow peas for a few minutes and then add the squash and continue to steam for a couple more minutes.
Step 2: In a bowl, combine the chicken, snow peas, squash, cabbage, scallions, and lemon juice.
Step 3: Drizzle on the oyster sauce and toss, adjusting to taste.
