Wilted Spinach
and
Turkey Salad Recipe

A quick dish, wilted spinach and turkey salad recipe is so delicious and easy to make and delicious, a real crowd pleaser every time.

Baby spinach, mushrooms and turkey dressed in a warm oil and vinegar dressing create this simple turkey salad.

5 Ingredients Needed:

cooked turkey - 2 cups cubed

baby spinach - 1 (9 oz) bag washed spinach

mushrooms - 1 cup thinly sliced

olive oil - 2 tbsp

balsamic vinegar - 1 tbsp


Make Ahead:
- If cooking your own turkey,prepare as desired, cool and cube 2 cups

1. Steam spinach for a few minutes, until just barely wilted.

2. While spinach is cooking, combine the olive oil and vinegar in a bowl or jar with tight fitting lid, whisking or shaking until thoroughly combined.

3. When spinach is finished steaming, transfer to a mixing bowl. Immediately add the dressing and toss to coat. You want to warm the dressing with the spinach as you toss them together.

4. Next add the turkey and the mushrooms and toss salad again. Season with salt and pepper if desired.

** Quick-cooking brown rice makes for a great fast dinner meal. Simply serve the turkey salad over warm cooked rice. For extra richness, use the addition option from below, and sprinkle walnut pieces over the top of the salad. Add a side of sliced green, sweet red and yellow peppers dressed in lime juice and olive oil.

** Serve this quick salad with mashed potatoes and thinly sliced tomatoes and cucumbers seasoned with lemon pepper on the side.
