4 Ingredients Needed:
brown rice – 2 cups cooked and warm
red bell peppers – 1 cup medium dice
pecans – 1/4 cup roughly chopped
feta cheese – 1/4 cup crumbled
Make Ahead: - Cook 1 cup of uncooked rice according to package directions and cover to keep warm

1. Prepare rice ahead of time and keep warm in the pan.
2. In a mixing bowl combine the red pepper, pecans and the crumbled feta.
3. Add the warm cooked rice and mix well. Serve immediately.
