The freshest flavors create this quick tomato salad recipe. Sweet juicy tomatoes, spicy red onion and salty capers combine with the cool creaminess of cottage cheese in a flavorful layering of taste and texture.

This is a terrific tomato salad requiring just a few ingredients and very little preparation and can be served in a variety of ways for a quick meal anytime.

Quick Fact: Tomatoes are not only flavorful and a great addition to any salad, they have some healthy benefits as well. They contain the antioxidant, lycopene, as well as an assortment of minerals and vitamin C. They are low in fat and with so many varieties these days the choices are almost endless.

You will need 5 ingredients:

- Tomatoes
- Cottage Cheese
- Red Onion
- Capers
- Fresh Basil

Ingredients:

tomatoes – 2 large, washed and quartered
(if you can buy your tomatoes at a farmer’s market choose those -
the fresher and more flavorful the tomatoes you use,
the better tasting this salad will be)

cottage cheese – 1 cup
(choose low fat or fat free to cut down on fat)

red onion – 1/2 cup thinly sliced in half moons

capers – 1 tbsp

fresh basil – 1 tbsp coarsely chopped

1. Wash and quarter the tomatoes and set aside.

2. In a bowl, combine the rest of the salad ingredients and toss well to combine.

3. Arrange the tomato wedges on two plates and spoon mixture over tomatoes.
