Sweet Apple Tempeh Salad



This easy sweet apple tempeh salad was made with some odds and ends in my fridge. The result was such a delicious salad that is so easy to make, is vegan friendly, and makes a meal all by itself.

I marinated the tempeh very briefly in tamari soy sauce and then combined it with sweet gala apples, creamy avocado, fresh ginger, and an all natural ginger dressing.

7 Ingredients Needed:

8oz tempeh - cubed (any flavor you prefer)

1 medium gala apple - cored and diced

1/2 cup avocado - cubed

1/2 cup celery - chopped

4 very thin slices of fresh ginger - finely chopped

5 cups romaine lettuce - roughly chopped or torn into pieces

sesame ginger dressing - store-bought variety (as desired)
(I used Newman's Own Low Fat Sesame Ginger Dressing - I love the dressings from this company because they are all natural and taste great.)

1. Cube the tempeh and place in a small container that has a lid. Sprinkle some tamari soy sauce over the cubes, enough to lightly cover. Put the lid on the container and shake the container a few times and allow the tempeh to sit for about ten minutes, shaking occasionally.

2. Place the diced apple, cubed avocado, chopped celery, chopped ginger, and the lettuce in a bowl. When the tempeh is ready, add it to the bowl too.

3. Drizzle the salad dressing over the ingredients (I started with about 1/2 cup) and toss well to combine. Taste and adjust the dressing to your taste.
