*Quick Tip: To reduce the fat content in this recipe make the following substitutions: For the Ground Beef use Ground Turkey. For the Cheddar Cheese use low-fat or nonfat Cheddar Cheese. For the Sour Cream use low-fat or nonfat Sour Cream. You could also use half sour cream and half yogurt to lighten it up a little more.
Make Ahead: - 1 lb ground beef, browned, drained and mixed with the taco seasoning and allowed to cool.
1. In a skillet, brown the ground beef, drain and stir in the taco seasoning. Set aside and allow to cool.
2. After cooling the beef mixture, add the beans, tomato, onion and cheese to the skillet. Combine ingredients together.
3. Divide the lettuce between the serving plates and top the lettuce with the beef mixture.
4. In a small bowl, combine the sour cream and the salsa and divide the mixture among the four serving plates, topping each taco salad with the mixture.
5. For the final step, either sprinkle each salad with the crumbled tortilla chips or serve them around the outer edge of each serving plate.
Note: Additional cheese can be sprinkled over the top of each taco salad.
