Here are more summer salad recipes to enjoy. Each has just a few simple ingredients and use the great tastes of summer produce. These easy recipes are perfect for quick summer meals.

Kiwi Mango Salad with Almonds


• 3 medium kiwis – skin removed and cubed
• 1 large *mango – skinned, seeded, and cubed
*(you can also use frozen mango pieces (1 1/2 cups) - just thaw first)
• 1 cup jicama – skinned and diced
• 2 tbsp sliced almonds

Step 1: In a mixing bowl, combine all the salad ingredients and toss well.

Optional Additions: Try adding some cubes of avocado for a creamier salad or cooked, cold, shelled shrimp for a quick and easy seafood salad.

Quick Meal Ideas:

- For a quick, easy and light meal, serve this fresh summer salad over a bed of salad greens along with crisp breadsticks.

- Another simple idea is to spoon this quick salad into a bowl over some plain low-fat yogurt. Serve along with cinnamon pita chips or cinnamon graham crackers or toasted cinnamon bread with cream cheese spread.

Pasta Salad with Chick Peas and Tomatoes


• 2 cups cooked penne pasta
• 3/4 cup canned chick peas – rinsed and drained
• 1/2 cup cherry or grape tomatoes - halved
• 2 cups baby spinach
• 1/4 cup red radishes – halved and thinly sliced
• Juice of 1 lemon
• 4 tbsp olive oil

Step 1: Place all the salad ingredients in a mixing bowl and toss well to combine. Adjust the lemon juice and/or olive oil if needed to taste.
Step 2: Season with salt and pepper to taste.

Optional Additions: Try adding some cubes of sharp cheddar cheese or pitted and chopped oil-cured olives for added flavor for this summer salad recipe.

Cold Beet Salad


• 1 package prepared (roasted or steamed) beets – cut into bite-size pieces (look in the produce section for packaged cooked beets)
• 1/2 cup corn kernels (steam lightly if desired)
(frozen corn may be used, just thaw and drain)
• 1 cup shredded carrots
• 1/2 cup shredded cabbage
• 1/2 cup low-fat or fat-free sour cream
• 1 tbsp fresh dill (finely chopped) or 1 tsp dried

Step 1: In a mixing bowl, combine all the ingredients and toss well. Add more sour cream if desired.
Step 2: Salt and pepper to taste.

Optional Additions: For a little extra spice and heat, try adding a little horseradish to the sour cream before adding to salad. You might also like to try adding some cooked crabmeat or pine nuts.
