Summer Quinoa Salad
A summer quinoa salad that's simple and refreshing and makes the perfect light meal for lunch or dinner.
2-3 servings

7 Ingredients Needed:
2 cups - cooked quinoa
1/2 cup - cucumber (diced)
1/2 cup - frozen mango cubes (thawed)
1/4 cup - red onion (diced)
1 tbsp - olive oil
1 tbsp - lemon juice
1 tbsp - fresh cilantro (chopped)

In a mixing bowl, combine all the salad ingredients and toss well to combine. If desired, season with a little salt and pepper to taste.
