Banana Blueberry Salad


• 2 large bananas – quartered lengthwise and sliced into chunks
• 1 1/2 cups blueberries
• 3/4 cup plain low-fat yogurt
• 3/4 cup ricotta cheese
• 1/4 tsp cinnamon
• Sliced almonds – for garnish

Step 1: Place the sliced bananas and blueberries in a mixing bowl.
Step 2: In a small bowl, combine the yogurt, ricotta, and cinnamon.

Quick Meal Idea:

- To serve this spring salad recipe, use bowls or parfait glasses and place a layer of fruit on the bottom, then a layer of the yogurt/cheese combination, then a layer of fruit, then a dollop of the cheese mixture on top. Sprinkle the sliced almonds over the top of each serving.

Easy Tuna Salad with Sweet Mustard Dressing


• 4 oz tuna – canned (in water and drained) or fresh tuna (grilled, baked or broiled)
• 1/4 cup scallions – thinly sliced
• 1/2 cup seedless cucumber - diced
• 1 navel orange – peel, remove pith, quarter and thinly slice
• 1 tbsp capers – rinse to remove salt and drain
• 2 tbsp prepared honey mustard

Step 1: Flake the tuna and place in a mixing bowl along with the scallions, cucumber, orange, and capers.
Step 2: Add the mustard to the tuna and vegetables and fruit and toss well to combine.
Step 3: Salt and pepper to taste.

Optional Additions: Try adding some torn fresh basil leaves or some shaved parmesan cheese on top of each serving.

Quick Meal Ideas:

- Serve this spring salad recipe on radicchio leaves or Bibb lettuce along with a serving of warm, cooked couscous seasoned with lemon zest and salt and pepper.

• 2 cups cooked brown rice

• 1 tbsp pitted oil-cured black olives – roughly chopped
• 2 tbsp fresh squeezed lemon juice
• 1 tbsp olive oil

Step 1: In a mixing bowl, combine the cooked rice, asparagus, and olives.
Step 2: Add the lemon juice and olive oil to the salad ingredients and toss well. Adjust lemon juice and/or oil if needed.
Step 3: Salt and pepper to taste.

Optional Additions: Try adding some mandarin orange pieces or some fresh grated parmesan cheese for an extra boost of flavor in this spring salad recipe.

Step 2: In a smaller bowl, combine the ricotta cheese and the honey.
