This spicy tuna potato salad recipe is a little different blend of flavors with a spicy crunch. Tuna and potatoes combined with cornichon pickles in an olive oil and lemon dressing. Great flavor in a quick, easy and delicious tuna salad recipe

The easy menu planner below will give you a variety of delicious and quick meal ideas for this spicy tuna potato salad recipe.


2 servings (as a main meal)

5 Ingredients Needed:

canned water-packed tuna – 1 (6oz) can drained

red potatoes – 2 small or 1 medium potato
(steam until tender, approximately 7-10 minutes, cool and cube)

*cornichon pickles – 1/4 cup chopped

Cornichon - a small pickled cucumber (gherkin) approximately 1-3 inches long. These are available in bottles in most supermarkets. You may substitute dill or sweet and sour pickles instead.

olive oil – 2 tbsp

fresh squeezed lemon juice – 1 tbsp or to taste

Make Ahead:
- Steam 1 medium or 2 small red potatoes until tender, cool and cube

1. In a mixing bowl, combine the tuna, potatoes and pickles.

2. In a jar or bowl, combine the olive oil and lemon juice and mix well.

Herb Option: If you like, you can add fresh or dried dill to this seafood salad for added flavor. Use about 1 tbsp fresh chopped or 1/4 tsp dried or to taste. Add to the dressing ingredients before mixing.

3. Add dressing to tuna salad ingredients and toss well to combine.

4. Allow salad to marinate in the refrigerator for at least thirty minutes before serving.
