Smoked Salmon Salad Recipe
with
Avocado Relish

This smoked salmon salad recipe is filled with layers of flavors. Smoked salmon, tomato, avocado, dill pickles and Dijon mustard create a taste that is rich and textured.

You can easily turn this salmon salad into a seafood pasta salad. See the serving suggestions below.

6 Ingredients Needed:

*avocado – 1 large avocado
(stone removed, peeled and diced finely)

dill pickles – 1/4 cup diced finely

Dijon mustard – 1 tsp

fresh mung bean sprouts – 2 to 3 cups
(washed and patted dry)

tomato - 1 large or 2 medium (sliced thinly)

smoked salmon – 4 oz



* Drizzle lemon juice over the avocado to prevent browning.

Avocado Relish: In a mixing bowl, combine the diced up avocado, pickles and mustard. You may mash the avocado if you prefer a creamier texture.

This salad is presented in layers on each plate.

1. On each serving plate make a bed of bean sprouts, followed by a layer of tomato slices.

2. Next, layer salmon slices over the tomato.

3. Now take the avocado relish and place as much as you would like on each salmon salad.

4. If you like, top off each serving with a drizzle of lemon juice.

Serving Suggestions:

** As a change of taste, instead of the mung bean sprouts, you can also serve this seafood salad layered on top of warm pasta (couscous, elbow macaroni or farfalle), or over whole grains like warm basmati rice or quinoa.
