Quick and easy Seaweed Salad Recipes that are delicious alone or accompanied by seafood, egg rolls, rice or even your favorite sushi.

Flavorful seaweeds including arame, hijiki and wakame combined with simple ingredients like apples, almonds, avocado, lemon, cilantro and more to make quick and delicious salads and quick meal ideas.

Use the optional additions to create your own unique salads and the serving ideas for easy menu planning.

Each salad will make approximately two servings.

Arame Seaweed Salad

1/2 cup dried arame seaweed
(soak for 10 minutes or until softened, rinse, drain and roughly chop)
1 cup diced plum tomatoes
1/2 cup thinly sliced celery
1/4 cup finely chopped fresh cilantro
2 tbsp rice vinegar (or to taste)
drizzle of low-sodium tamari or soy sauce
1 tbsp sliced almonds

- In a bowl, combine all ingredients and toss well.

Light Meal:

* Serve this quick salad in steamed red cabbage leaves with seasoned, baked chicken on the side.

Salad and Egg Rolls:

1/2 cup dried hijiki seaweed
(soak in water until softened, rinse, drain and chop)
1 apple - chopped into medium dice (try gala or fuji)
1 cup cucumber - sliced thinly into quarter-moons
1 tsp fresh grated ginger (or to taste)
sesame oil (to taste)
rice vinegar (to taste)

- In a bowl, combine the seaweed, apple, cucumber and ginger.

- Drizzle on the oil and vinegar and toss well. Adjust to taste.

(soak in water for 5 to 10 minutes, rinse, drain and chop)
1 cup shredded cabbage
1/2 cup shredded carrots
1/2 cup chopped mushrooms
1 clove garlic - finely minced
1 tbsp rice vinegar
1 tbsp low-sodium tamari or soy sauce
1 tbsp sesame oil (or to taste)

- In a bowl, combine the ingredients and adjust oil to taste, if needed.

1/4 cup diced scallions
1 tbsp toasted sesame seeds
2 tbsp reserved juice from oranges
1 tbsp sesame oil (or to taste)

- In a bowl, combine the ingredients and adjust oil to taste, if needed.
