Now that you have some fresh salsa, here are some quick and easy serving and meal ideas:

Layered Salsa Salad:
Place a layer of salad greens on a plate, a layer of shredded cabbage, some thin slices of avocado, then chopped pitted green olives, then spoon some of the salsa over top. Then another layer of greens, then some slices of deli meat (your choice – cut into pieces), then some chopped, drained marinated artichoke hearts, then thin slices of seedless cucumber, finally some more of your salsa.

Salsa Wrap:
A simple salsa idea is to spread a soft tortilla shell with a layer of your favorite hummus, top with some fresh sprouts, some fresh grated parmesan cheese, and then as much salsa as you like. Wrap it up and enjoy.

Seafood Salsa Cocktail:
Using martini, wine, or favorite clear glasses, place a layer of salsa on the bottom, then add cold, cooked and cubed seafood of choice, a few cubes of avocado, then another layer of salsa. Top with a squeeze of lemon or lime juice and a spoonful of sour cream. If your glass is tall enough repeat the layers again.

Stuffed Omelet:
Make a really delicious egg dish that's filled with a lot of flavor and texture. Cook up your favorite omelet and use the salsa as a filling along with thin slices of avocado and shredded carrots.

Quick Egg Salad:
Combine salsa with chopped hard boiled eggs and a little nonfat Greek yogurt and chopped, pitted black olives. Serve on salad greens along with warm rolls for a quick meal.

Spicy Roll-Ups:
Spoon salsa onto sliced prosciutto, top with long, thin slices of cucumber, roll up and then fasten closed with a toothpick.

Spicy Potato Salad:
Always a good topping for a baked potato but it can also make a great potato salad. Mix some of the salsa with sour cream and toss with cooked, cooled, and cubed potatoes. Add some chopped fresh dill and you have a delicious and spicy potato salad.

Marinated Veggie Kabobs:
Using short wooden skewers, place a selection of cubes of your favorite cheese (cheddar, swiss, Colby . . .) alternating with fresh veggies like chunks of celery, cubed cucumber pieces, chunks of sweet bell peppers, frozen artichoke pieces (thawed and drained), and whole, pitted olives (black or green). Place in a bowl of prepared salsa and allow to marinate for an hour or so in the refrigerator. When ready to serve, remove kabobs from salsa and tap off any excess, and place on individual serving plates with whole grain crackers. This easy salsa idea makes a great party appetizer.

Quick Tofu Salad:
Here’s a flavorful vegetarian salad and an easy salsa idea. Combine chopped celery, prepackaged flavored baked tofu (cut into small chunks), roasted red peppers, cubed chayote squash, and some diced apple with as much salsa as desired. Serve on salad greens or on top of a bed of cooked and cooled couscous for a quick and easy meal.
