Salmon Salad
with
Mustard Caper Dressing



This is one of my favorite salmon salad recipes because it requires a minimum of ingredients (which I usually have on hand), takes practically no time to make and tastes fresh and delicious everytime.

This quick and easy seafood salad can be served on its own with simple accompaniments or turned into a flavorful meal in minutes. Just take a look at the menu planner below and you will find some fast solutions to meal planning.

2-3 servings



You will need 5 ingredients:

- Canned Salmon
- Cucumbers
- Sour Cream (Fat-reduced or Non-fat)
- Mustard
- Capers

Ingredients:

canned salmon – 6oz drained and flaked

cucumbers – 1 cup cut into thinly sliced half-moons
Because cucumber seeds can be bitter,
I prefer to use seedless or pickling cucumbers in this recipe


sour cream – 1/2 cup
use fat-reduced or non-fat sour cream
to cut the fat in this recipe


prepared mustard – 1 tbsp

capers – 1 tbsp (rinsed and drained)


Optional Addition: Adding some fresh dill to this salad
really adds a great layer of flavor.

1. Place the salmon and the cucumbers in a bowl.

2. In another smaller bowl combine the sour cream, mustard and capers and mix well.

3. Add the sour cream mixture to the salmon and toss to combine. Season with fresh ground pepper as desired.

Quick Meals - Menu Planner:

Light Meal Ideas:

** Scoop seafood salad into pita pockets and serve along with a small bowl of your favorite salsa and carrot, celery and jicama sticks.

** Place this quick salmon salad on a bed of baby spinach leaves and thin slices of avocado.


Quick Dinner Ideas:

** Turn this simple seafood salad into a quick main meal by serving it over a bed of cooked angel hair pasta with a side of steamed snow peas and mushrooms. Add warm garlic bread if desired.

** Baked potatoes are always a great standby dinner idea and serving this quick salad as a topper for a warm baked potato makes a great quick meal. Add a simple green salad of lettuce greens tossed with olive oil and lemon juice and you have a simple and delicious meal in minutes. This idea also works well with warm baked sweet potatoes too.

These simple ingredient exchanges will add a little different flavor each time you make this quick salmon salad.

* Instead of Cucumbers: try Sliced Water Chestnuts or Jicama (thinly sliced and diced).

* Instead of Sour Cream: try Low-fat or Non-fat Greek Yogurt or Fat-Reduced Mayonnaise.
