Citrus Sage Salmon Salad

Here's a delicious salmon salad made with mandarin oranges, crunchy celery, quinoa, sage, and a simple dressing. It's filled with layers of flavor and is very easy to put together.

This recipe starts with grilled or baked salmon. If you don't have the time to cook the fish you can use canned (just drain it before using). The taste will be different but you will still end up with a very tasty salad.

2 to 3 servings

Ingredients:

- 4oz grilled or baked salmon (flaked)
- 1 cup cooked quinoa
- 1/2 cup celery (chopped)
- 1/2 cup canned mandarin oranges (drained (reserve liquid) - cut each segment in half)
- a few leaves of fresh sage (chopped)or 1 tsp dried sage
- olive oil
- juice from mandarin oranges

1. Combine salmon, quinoa, celery, oranges, and sage in a bowl.

2. Drizzle some olive oil and reserved juice from the oranges over salad ingredients, along with some salt and pepper to taste. Taste salad and adjust oil and/or juice as needed.

Serving Idea:

** Serve salad on mixed salad greens or steamed kale with a side of warm breadsticks.
