Yogurt Horseradish Dressing

Roast beef salad with yogurt horseradish dressing is a terrific, tangy and creamy quick salad recipe. Roast beef combined with sweet red peppers,
crisp romaine lettuce and a spicy and creamy yogurt horseradish dressing. You can use deli roast beef or leftover roast beef for quick and easy preparation.

This simple and flavorful salad can be served with pasta or rice or even made into a wrap style sandwich. See all the easy serving ideas below in the menu planner.

5 Ingredients Needed:

roast beef - 6 oz of thinly sliced roast beef from the deli
(stack slices on top of each other and
cut into 1/2" wide strips about 1" long)

sweet red peppers - 1 cup cut into thin strips
(roughly the same size as the beef)

romaine lettuce - 4 to 5 cups washed, dried and torn or cut
into bite-size pieces

prepared horseradish - 2 to 3 tsp (or to taste)

plain nonfat yogurt - 1/2 to 3/4 cup

1. In a mixing bowl, combine the roast beef, red pepper and lettuce.

2. In another small bowl, combine the horseradish and yogurt, adjusting horseradish to suit your taste.

3. Add the dressing to the roast beef salad ingredients, combine well and season with salt and pepper if desired.
