Rice Salad with Peas
and
Fresh Mint



This recipe makes a simple and flavorful rice salad with sweet peas, fresh mint, leeks and sunflower kernels dressed in a lemon dressing.

It's a great quick meal or even a simple mini-meal idea too. See the menu planner below for some easy serving suggestions.

2-3 servings

7 Ingredients Needed:

cooked basmati rice – 2 cups

fresh or frozen (thawed and drained) peas – 1 cup

leeks – 1/2 cup thinly sliced half-moons

sunflower kernels – 2 tbsp

fresh squeezed lemon juice – 2 tbsp

sesame oil – 1 tbsp

fresh mint – 1 to 2 tbsp chopped (to taste)



Flavor Booster: Add some cooked and crumbled bacon to this salad to add an extra layer of flavor
(vegetarians - use vegetarian style bacon of choice)

Make Ahead:
- 2 cups of cooked basmati rice

- If using frozen peas, thaw and drain

In a mixing bowl, combine all the ingredients and toss well.
