Rice Salads

Quick and Easy Rice Recipes


These quick rice salads combine simple ingredients with healthy whole-grain rice to create a variety of quick meal recipes. Use them for lunch or dinner or even for simple snacks too. They are a great healthy meal option any time.

Use the quick meal ideas provided with each salad for fuss-free menu planning.

Each recipe makes approximately 2 to 3 servings.

Tofu Rice Salad With Lemon

2 cups cooked basmati rice
1 cup of flavored tofu – cubed
1 cup lightly steamed snow peas
1/2 cup marinated artichoke hearts – drained and chopped
1 tbsp oil from artichoke hearts
1 tbsp lemon juice
1 tsp lemon zest
fresh cilantro – to garnish

- Combine all ingredients except the cilantro in a bowl and toss well, adjusting the oil and/or lemon juice as desired. Garnish each serving with cilantro.

Serving Suggestion:

Serve salad with along with mandarin orange segments topped with goat cheese crumbles or walnut pieces and fresh ground black pepper.

Spicy Rice Salad

2 cups cooked brown rice
1 to 2 tbsp (or to taste) jalapeno slices – chopped
1/2 cup chayote squash – diced
1/2 cup salsa
1/4 cup pitted black olives - chopped
1 tsp cumin
1 to 2 tbsp (or to taste) garlic oil

- Place the rice, jalapeno, squash, salsa, olives, and cumin in a mixing bowl. Add the garlic oil and toss well to combine, adjusting the oil if needed.

Serving Suggestion:

Serve salad along with slices of grilled steak or grilled tofu or tempeh topped with grilled onions and green and red bell pepper strips.

Wild Rice Black Bean Salad

2 cups cooked wild rice
3/4 cup black beans
1/2 cup chopped red onion
1/4 cup sliced water chestnuts
1 tbsp fresh squeezed lime juice
1 tbsp olive oil
bacon or soy bacon crumbles – for garnish

- Place the rice, beans, onion, water chestnuts, lime juice, and olive oil in a mixing bowl and toss well to combine.

Serving Suggestion:

- Serve salad on a bed of fresh baby spinach leaves and top each serving with the crumbled bacon. Add a side dish of baked sweet potato fries or baked sweet potato chips.

Simple Rice Salad

2 cups cooked brown rice
1/2 avocado – peeled, pitted and cubed
2 scallions – sliced
1/2 cup shredded carrots
1/2 cup shredded cabbage
Italian dressing – as desired to moisten the salad

- Combine all ingredients in a bowl and toss well.

Serving Suggestion:

Serve this quick recipe along with a side of stir-fried chicken strips (regular or vegetarian style) and broccoli pieces tossed in a little soy sauce and lemon juice.

Tropical Rice Salad

2 cups cooked basmati rice
1/2 cup sweet red peppers – diced
2 stalks of celery – diced
1/2 cup mango cubes
1/2 cup pineapple chunks
1/4 cup feta cheese crumbles

- In a bowl combine all the salad ingredients in a bowl and toss well.

Serving Suggestion:

This flavorful salad makes a great quick meal when served with cooked ham steaks topped with mustard.

You could also just serve this flavorful salad in bowls with warm French bread slices topped with butter or a vegan/vegetarian butter spread.

Rice Salad With Hummus

2 cups cooked brown rice
1 cup tomatoes – diced
1/4 cup red onion – thinly sliced into quarter-moons
2 tbsp pimiento stuffed olives – chopped
1/4 to 1/2 cup prepared hummus (use plain or flavored hummus)
5 cups of arugula
pine nuts – as garnish

- In a bowl, combine the rice, tomatoes, onion, olives, and hummus and toss well.

Serving Suggestion:

To serve, place the arugula on serving plates and place the salad on top. Garnish each salad with a sprinkling of pine nuts. For a simple accompaniment, serve with grilled or fried polenta slices or warm corn bread slices or muffins with your favorite spread.
