Rice Salad with Shallots
This rice salad is a great choice when you want something light and filling. Basmati rice is so flavorful and makes this quick salad so delicious when combined with sweet shallots and juicy cherry tomatoes.
It can be served simply with avocado and cucumber or served with some quick side dishes for a more substantial meal. Our menu planner has some easy meal planning ideas.

5 Ingredients Needed:
brown basmati rice – 2 cups cooked (keep warm)
shallots – 3 cloves diced
baby spinach leaves – 3 cups
cherry tomatoes – 1/2 cup halved
olive oil – 1 to 2 tbsp (to taste)
Optional Addition: Fresh basil is a delicious addition to this salad. Simply tear fresh leaves as desired into the salad.
Make Ahead:
- Prepare rice according to package directions and measure out two cups and keep warm.

1. Place the warm rice in a bowl and add the spinach leaves and toss to wilt the leaves.
2. Add the shallots and tomatoes and basil (if using).
3. Add the oil one tablespoon at a time and toss. I like to add just enough oil to moisten all the salad ingredients. Salt and pepper to taste.

** Make a light meal by serving this rice salad with a simple green salad tossed with olive oil, fresh lemon juice and fresh grated black pepper.
** Another idea is to serve this easy salad with a side of avocado and cucumber cubes tossed in a little seasoned rice vinegar.
Quick Dinner Ideas:
** You can make a quick dinner by serving salad in bowls along with a side of stir-fried marinated artichoke hearts (drain and chop before cooking), sliced asparagus and celery dressed with lemon zest and some of the marinade from the artichoke hearts then topped with a sprinkling of croutons.
** For a more hearty meal idea, try serving this quick salad along with steamed sweet potato cubes and scallions topped with fresh grated pepper.
