Rice Salad Recipe

With the emphasis on whole grains for a healthy lifestyle, this simple but rich tasting quick salad recipe is perfect. Sweet rice and avocado with crunchy red onion and deep tomato taste, creates an easy rice salad that is fresh, flavorful and healthy all at the same time.

Serve our rice salad with an omelet, for a quick dinner, or simply as a light lunch salad. Take a look below for some easy meal ideas.

What you will need 5 ingredients:

- Brown Rice
- Avocado
- Red Onion
- Bottled Sun-Dried Tomatoes in Oil
- All Natural Store Bought Vinaigrette Dressing




Make Ahead for this salad:

- 3 cups of cooked brown rice

Ingredients:

brown rice - 3 cups cooked
(wild or basmati rice may be substituted)

avocado - 1/2 cup diced

red onion - 1/2 cup diced

*sun-dried tomatoes in oil - 1/2 cup chopped

* all natural vinaigrette dressing - 1/2 cup or to desired moistness
(choose your favorite natural store bought brand)



*Reduce the fat: Instead of sun-dried tomatoes in oil, choose those that are just dried and soften in hot water for thirty minutes. Also, choose a low-fat or fat-free vinaigrette dressing.

1. In a mixing bowl, combine the rice and vegetables.

2. Add the salad dressing to the bowl, adjusting to desired moistness.
