5 Ingredients Needed:
brown rice - 3 cups cooked (wild or basmati rice may be substituted)
avocado - 1/2 cup diced
red onion - 1/2 cup diced
*sun-dried tomatoes in oil - 1/2 cup chopped
* all natural vinaigrette dressing - 1/2 cup or to desired moistness (choose your favorite natural store bought brand)
*Reduce the fat: Instead of sun-dried tomatoes in oil, choose those that are just dried and soften in hot water for thirty minutes. Also, choose a low-fat or fat-free vinaigrette dressing.
Make Ahead:
- 3 cups of cooked brown rice

1. In a mixing bowl, combine the rice and vegetables.
2. Add the salad dressing to the bowl, adjusting to desired moistness.
