Our red potato salad recipe has fresh vegetables and a crispy crunch. Red potatoes, cucumber, asparagus and walnuts combined with a lemony mustard dressing create a quick potato salad that is very flavorful.

The menu planner will give you a variety of quick meal ideas for serving this easy potato salad.

8 Ingredients Needed:

red potatoes – 6 medium sized potatoes
(boil until tender, drain, cool, leave skins on and cut into cubes)

prepared Dijon mustard – 1 tbsp

fresh squeezed lemon juice – 2 tbsp

olive oil – 1 tbsp

cucumber – 1/2 cup medium dice

fresh or frozen asparagus tips - 1/2 cup
(if using frozen, thaw, drain and measure 1/2 cup)

walnuts – 1/4 cup chopped

fresh dill – 1 tbsp chopped


Make Ahead for this Salad:

- Boil 6 medium red potatoes until tender, drain, cool and cut into cubes
- If using frozen asparagus, thaw and drain

1. In a large saucepan, bring enough water to boil to cover potatoes and cook until tender. Remove from pan, drain, cool and cut into cubes.

2. In a large bowl, combine the mustard, lemon juice and olive oil. Whisk until well combined.

3. Add the cubed potatoes, cucumber, asparagus and walnuts to the bowl and toss well to coat everything.

4. Sprinkle the dill over the salad and toss gently to distribute evenly throughout the salad.

Note: Serve this red potato salad recipe as a cold or hot potato salad.
