Garlic Lemon Broccoli

1. Simply cut up a head of broccoli into bite-size pieces and steam until tender. Use as much of the broccoli as desired for this recipe and use the cooked leftovers as additions for soup (canned or homemade), stir-fries, salads or just reheat for another meal.

2. Place the cooked broccoli into a bowl and drizzle with garlic oil and fresh squeezed lemon juice. Season with a little salt and pepper and toss well to coat evenly.

Flavor Boosters: This is such an easy and delicious way to serve up this green vegetable and you can add some extra flavor boosters using pine nuts, grated parmesan cheese, pitted and sliced black olives or some crispy cooked crumbled bacon. Some fresh grated garlic is always good too.

Vegetable Options: This simple idea can also be used on Brussels sprouts, kale, cauliflower, cabbage, and asparagus too.

Quick Spinach Salad

A quick and refreshing salad that requires only a few ingredients and can be put together in minutes.

5 cups loosely packed washed spinach
(make sure to spin or towel dry spinach before using)
1/3 cup crumbled cheese (like goat, blue or feta)
balsamic vinegar - to taste
1/2 cup sliced almonds


1. In a bowl combine the spinach, cheese and vinegar. Toss gently to combine and distribute the vinegar. Adjust vinegar to your own taste. When plating each serving garnish salad with the sliced almonds.

Vegetable Options: This flavorful salad can be varied by combining spinach with other greens like arugula, frisee, shredded cabbage or even radicchio or replacing the spinach with another leafy green entirely.

Ingredient Exchanges: You could also replace the cheese with fruit like strawberries, sliced peaches, red or green seedless grapes or even diced apples.

Simple Lettuce Salad

This is a basic lettuce salad recipe that is very flexible and can be adjusted to the ingredients you have on hand.

5 cups of assorted salad greens (washed and spun dry)
(try arugula, frisee, romaine, green or red leaf lettuce,
bibb lettuce, iceberg, etc)

2 cups fresh vegetables cut into bite-size pieces
(choose your favorites - tomatoes, cucumbers, snow
peas, artichoke hearts, shredded carrots,
celery are just a few ideas)

1/4 to 1/2 cup flavorful additions
(some ideas: nuts, seeds, pitted olives, blueberries,
raisins, low-fat cheese, sun-dried tomatoes, jalapeno peppers)

1/2 cup (or to desired moistness) of your favorite dressing


1. Combine the greens, vegetables and flavor additions in a bowl.

2. Add dressing and toss well to combine, adjusting dressing as needed.

Arugula Avocado Salad

5 cups of arugula (washed and spun dry)
1/2 avocado (cubed)
1 apple (cored and cubed)
3 stalks of celery (diced)
1/4 to 1/2 cup (or to desired moistness)
bottled French vinaigrette dressing


1. Place all the ingredients in a bowl and toss gently to combine well. Season with some fresh ground black pepper if desired.

Watercress and Cabbage Salad with Walnuts

1 cup watercress (cut into one inch lengths)
1 cup green or red cabbage (shredded)
1 cup seedless cucumbers (thinly sliced half-moons)
1 (6oz) can water-packed tuna (drained and flaked)
3/4 cup non-fat plain yogurt
1 tbsp mustard
2 tbsp walnut pieces


1. Place the watercress, cabbage, cucumbers and tuna in a bowl.

2. In a smaller bowl, combine the yogurt and mayonnaise.

3. Add the yogurt mixture to the salad ingredients and toss well to combine.

4. Sprinkle each serving with some walnut pieces.

Vegetarian Option: Instead of the tuna, substitute your favorite flavor of baked tofu cut into cubes.
