Raspberry Goat Cheese Salad

Walnuts

A simple and flavorful salad, this raspberry goat cheese salad with walnuts includes fresh raspberries, creamy goat cheese, walnuts, arugula and a light vinegar dressing. An easy cheese salad that's the perfect light meal any time.

5 Ingredients Needed:

fresh raspberries - 1 cup
(frozen raspberries can be used if fresh are unavailable –
just thaw and drain)

* goat cheese – 4 oz cut into slices or cubes

walnuts – 1/4 cup chopped

arugula – 4 cups (washed and patted dry)

champagne vinegar – as desired
(you can also use rice vinegar or red wine vinegar or raspberry vinegar)


*Reduce the Fat: Use low-fat or nonfat goat cheese.

1. Place the arugula in a mixing bowl and toss with vinegar, adjusting to suit your taste. Season with salt and pepper if desired.

2. Divide the arugula between two serving plates.

3. Now divide the goat cheese, raspberries and walnuts between the two serving plates and place on top of the arugula.
