Ramen Noodle Salad
This ramen noodle salad has a nice rich flavor and contrasting textures with the soft noodles and crunchy vegetables.

You will need 5 ingredients:
- 2 Packages Ramen Noodle Soup - Bottled Prepared Pesto - Sweet Red Peppers - Radishes - Seedless Cucumber

Ingredients:
ramen noodles - 2 packages (prepare the noodles as directed reserving the seasoning packets for another use)
prepared pesto - 1/4 to 1/2 cup diluted (put pesto is small mixing bowl and dilute with a little pasta water to make a sauce consistency)
sweet red peppers - 1 cup sliced into strips and then small chunks
red radishes - 1/2 cup sliced thinly
seedless cucumber - 1/2 cup cut into small chunks

1. Prepare the ramen noodles using both packages and save the seasoning packets for another use.
2. When the noodles are done, drain them (save about 1 cup of water to thin the pesto) and place them back in the saucepan you used to cook them in, covering with the lid to keep them warm.
3. In a large bowl, combine the pesto with a some of the pasta water until you have a thinned pesto sauce. Add the chopped peppers, radishes and cucumbers. Toss to combine.
4. Add the warm noodles to the mixing bowl and toss well, making sure the noodles are coated with the pesto and the vegetables are combined throughout the noodle salad.
This salad is best when served warm but can be chilled if you prefer.
