Quinoa Salad
with
Olives and Pine Nuts



Quinoa Salad Ingredients:
2 cups - cooked quinoa
1/2 cup - green bell pepper, diced
1/2 cup - snow peas, trimmed and lightly steamed
2 tbsp - black pitted olives, sliced
2 tbsp - lime juice
1 tbsp - olive oil
1/4 cup - fresh basil leaves, chopped
1 tbsp - pine nuts


Make Ahead:
- prepare 2 cups of quinoa
- steam peas and cool


2 to 3 servings

Directions:

1. Prepare quinoa and place in a bowl with the rest of the ingredients (except the pine nuts), toss well to combine. Salt and pepper to taste. Top each serving with a sprinkling of pine nuts.

Menu Planner:

** This easy salad can be served with a simple accompaniment of steamed tempeh and mushrooms dressed in a vinaigrette dressing of choice.

** For a light and easy meal, serve salad with a bowl of cut up melon, berries, and avocado cubes dressed with a little lemon or lime juice.

Ingredient Exchanges:

*Instead of Green Bell Pepper: try Roasted Red Peppers

*Instead of Black Olives: try Capers (reduce quantity to 1 tbsp)

Optional Additions:

- Make it a heartier salad by adding cut up cooked shrimp or chicken.
