Cranberry Quinoa Salad


A quick and easy quinoa salad made with sweetened cranberries, celery, and walnuts tossed in a simple olive oil vinaigrette.

5 Ingredients Needed:

cooked quinoa – 2 cups

dried, sweetened cranberries – 1/3 cup

celery - 1 cup thinly sliced

walnuts pieces – 1/4 cup

bottled olive oil vinaigrette – 1/3 cup (or to taste)


Make Ahead: 2 cups cooked quinoa

In a mixing bowl, combine all the salad ingredients and toss well, adjusting the dressing to taste.

Quick Meals - Menu Planner:

** Salad and Fruit:

Serve Salad: on mixed salad greens and thinly sliced
red onion rings
Side Dish: a bowl of cantaloupe and honeydew melon balls sprinkled with a little goat cheese.

** Salad with Crusty Bread:

Serve Salad: on baby spinach leaves
Side Dish: slice crusty French bread into 1/2" slices, drizzle with a little olive oil, sprinkle with a some Italian seasoning and top with thinly sliced tomatoes and a sprinkling of parmesan cheese.

** Quick Salad Meal:

Add to Salad: 4oz of sliced or cubed grilled or baked boneless chicken breast or 1 cup of cooked black beans and place salad on a bed of baby bok choy leaves
Side Dish: steamed summer squash slices and chopped roasted red peppers tossed with lemon juice, olive oil, and salt and pepper.

* Instead of Celery: try Carrots or a combination of Scallions and Red Bell Peppers (1/2 cup each)

* Instead of Walnuts: try Cashews or Hazelnuts
