Creamy Horseradish Potato Salad
Potato Salad Ingredients:
4 cups - red potatoes, boiled, cooled, and cut into 1 inch pieces
1 cup - celery, diced
1/2 cup - mushrooms, chopped
1/2 cup - low-fat sour cream
1 tsp (or as desired) - prepared horseradish
1 to 2 tbsp - bacon bits
Vegetarian/Vegan Option:
- substitute a vegan sour cream
- substitute vegan style bacon bits
Make Ahead:
- boil potatoes until just tender, remove from pan, allow to cool and cut into 1 inch pieces
3 to 4 servings

Directions:
1. Place the prepared potatoes, celery, and mushrooms in a bowl.
2. In a small bowl, combine the horseradish and sour cream, adjusting to taste.
3. Add the sour cream mixture to the salad along with some salt and pepper to taste and toss gently to combine. When serving, sprinkle some of the bacon bits on top of each salad.

** For a very simple meal, serve salad along with a warm bowl of vegetable soup.

* Instead of Celery: try a combination of Celery and Red Radish or Celery and Cucumber
* Instead of Mushrooms: try using Roasted Red Peppers
