This potato salad recipe is filled with the deep flavors of oregano, oil-cured olives and spicy scallions to create a quick salad that is filled with great taste. It’s simple to make and rich with flavor. Warm or chilled, this potato salad is a nice addition to any meal.

5 Ingredients Needed:

red skinned potatoes – 3 cups cooked, cooled and cut into medium-sized pieces
(this is approximately 3 medium size potatoes)

scallions – 1/2 cup finely chopped

oil-cured olives – 1/2 cup finely chopped

dried oregano – 1 tsp

all natural bottled French dressing –
1/2 cup or to desired moistness

Make Ahead:
- Boil potatoes, allow to cool and cut into medium-sized pieces

1. Place the cooked potatoes and scallions in a mixing bowl.

2. In a smaller bowl, combine the olives, oregano and French dressing and whisk together until completely combined. As you add the oregano to the bowl, crumble it between your fingers to release the oils.

3. Add dressing to the potatoes and toss well.

Note: This easy potato salad may be served at room temperature or as a cold potato salad too.
