The pistachio salad recipe, is also known as Watergate Salad and is a quick salad with just a few ingredients and can be put together in minutes for a truly quick dessert.

It’s sweet and creamy with a nutty flavor. Pistachio pudding, sweet pineapple and the creamy taste and texture of marshmallows and whipped topping, combine for a quick fruit salad that's filled with flavor and so easy to make. Give it a try.

You can easily turn this fruit salad recipe into a flavorful pie. See the serving ideas below.

4-6 servings

You will need 4 ingredients:

- 1 Package Instant Pistachio Pudding Mix (3 oz)
- 1 (20 oz) Can Crushed Pineapple (undrained)
- Miniature Marshmallows
- Frozen Whipped Topping (thawed)



Optional Ingredients:

- Pistachios
- Ready-made Graham Cracker Pie Crust



Make Ahead for this Salad:

- Thaw the Frozen Whipped Topping

Ingredients:

instant pistachio pudding mix – 1 (3oz) package

crushed pineapple with juice – 1 (20 oz) can

miniature marshmallows – 1 cup

frozen whipped topping (thawed) – 8 oz

1. In a bowl, combine the pudding mix with the pineapple and juice.

2. Fold in the marshmallows and the thawed whipped topping. Combine well.

3. Refrigerate pistachio salad for several hours before serving.

Optional Addition: A 1/2 cup of chopped pistachios can also be added to the fruit salad if you prefer. This adds a nice nutty crunch and a deeper pistachio flavor.

Serving Suggestions:

** Instead of refrigerating in a bowl, you can put this pistachio mixture into a square baking dish and allow to firm up in the refrigerator. When serving, cut fruit salad into squares and serve over lettuce greens or serve on chilled dessert plates with a sprinkling of chopped pistachio pieces.

** If you prefer, you can use this quick pistachio salad recipe as a pie filling and pour this mixture into a ready-made graham cracker crust and sprinkle a 1/2 cup of chopped pistachios over the top. Refrigerate and serve.
