Cranberry
Pecan Chicken Salad

Need a simple and flavorful salad? Try this cranberry pecan chicken salad. Quick to make and a great chicken salad to use for a fast lunch or dinner.



Ingredients:

- 1 (12.5 oz) can premium chunk chicken
(break up chicken chunks with a fork)
- 2 tbsp sweetened dried cranberries
- 1 stalk celery (chopped)
- 2 tbsp cilantro (finely chopped)
- mayonnaise (as desired - enough to moisten)
- 1 tbsp pecans (chopped)
- 1 to 2 scallions (thinly sliced)


2-3 servings

Place all ingredients in a bowl and mix well, adjusting mayonnaise to desired moistness.

Ingredient Exchanges:

Celery: Use diced or grated carrots or diced jicama.

Mayonnaise: Use plain low-fat or nonfat Greek yogurt.

Serving Ideas:

** Serve this easy chicken salad on a bed of fresh salad greens with some warm focaccia bread and a simple side dish of steamed broccoli tossed with fresh lemon juice, a little olive oil, and salt and pepper.

** Serve salad on a bed of chow mein noodles with a side of mushrooms, onions, and minced garlic sautéed in olive oil.
