Peach Salsa




Our Peach Salsa is a quick and easy recipe with wonderful peach flavor and great crunch. It can be used in a wide variety of ways to dress up fish, pasta and more.

Try serving this fresh fruit recipe in a seafood salad. See the easy salmon salad recipe below along with other delicious serving ideas.




Yield: Approximately 3 cups






You will need 5 ingredients:

- Peaches (Fresh or Frozen)
- Celery
- Apples
- Red or White Cabbage
- Fresh Squeezed Lemon Juice

Ingredients:

peaches – 2 cups diced
(you may use fresh or frozen (thawed and drained))

celery – 1/2 cup diced

apples – 1/2 cup diced

red or white cabbage – 1/2 cup thinly sliced

fresh squeezed lemon juice – 1 tbsp or to taste

__________________________________________________________


In a mixing bowl, combine all the ingredients.

Note: Allow to marinate for at least an hour.

Seafood Meal Idea:

** Serve this easy recipe as a topping for a simple fish dish with steamed rice. See the simple recipe below.


Scallops with Peach Salsa


Olive Oil       Heat a nonstick skillet over medium heat.
8 Scallops      Coat the bottom of the skillet lightly
Steamed Rice    with the olive oil.  Place the scallops in
                the skillet and cook on each side for 2-3
                minutes until opaque.

                Make a bed of steamed rice on each plate,
                serve scallops over the rice, top with the
                salsa and a drizzle of balsamic 
                vinegar if you like.  

                                                Serves 2


Light Meal Idea:

** You can also serve this delicious salsa with smoked salmon.

Smoked Salmon Salad with Peach Salsa

Lettuce Greens -           Place lettuce greens on serving
  4 cups                   plates, then layer on the salmon
Smoked Salmon              slices and top off with the 
  4 oz                     salsa.  Serve with a side of
Crusty Bread or            crusty bread slices or breadsticks.

                                                 Serves 2



Pasta Dish:

** Dress up any hot or cold pasta salad with this quick recipe. Simply add as much salsa as desired and toss well to combine completely.

Dip:

** This versatile recipe also works well when served as a dip with pita chips, baked potato chips or cut up vegetables.
