Selecting:

When selecting, look for fruit that is large and plump and heavy for its size. When it is ripe, it has a very fragrant aroma and the skin has a shriveled look and a deep rich color.

Avoid fruit that is overly hard to the touch.

Storing and Handling:

If the fruit is not quite ripe leave it to ripen at room temperature. Be sure to turn the fruit periodically as it ripens. When ripe it will look shriveled and dented and should be stored in the refrigerator. It can be stored in the refrigerator for up to about a week.

Preparing:

Cut in half and scoop out the flesh.
