This quick and easy Oriental salad recipe is full of flavor and crunch. Fresh vegetable taste, crispy noodles and just the right dressing make this a terrific Oriental salad that is quick to make and serve.

With a few simple additions you can make it into a quick and delicious entrée. See the menu planner and the addition ideas below for easy meal ideas.

7 Ingredients Needed:

cabbage – 4 cups shredded

scallions – 1/2 cup sliced

shredded carrots – 1 cup

packaged oriental ramen noodle soup – 1 package

toasted sesame oil – 2 tbsp

rice vinegar – 2 tbsp

sliced almonds – 1/2 cup

1. In a bowl, combine the cabbage, scallions and the carrots.

2. In another small mixing bowl, or a glass jar with a lid, combine the seasoning packet from the soup with the sesame oil and the rice vinegar. Whisk or shake well to combine thoroughly.

3. Pour the dressing over the salad and toss to combine.

4. Crunch up the dry ramen noodles and sprinkle over the salad along with the sliced almonds and toss again.

** For a light meal serve this quick salad on a bed of fresh washed baby spinach leaves and thinly sliced red onion.
