Minted Lentil Salad
A refreshing minted lentil salad that can be served as a simple meal with warm bread or rolls. A perfect recipe for vegetarians and vegans.
Ingredients: 1 1/2 cups - cooked lentils 1 cup - celery, diced 1/4 cup - red bell pepper, diced 1 clove - garlic, minced 1/4 cup - walnuts, chopped 3 tbsp - fresh mint, chopped 1 tsp - lemon zest olive oil - to taste
Make Ahead: - 1 1/2 cups cooked lentils (1 (15oz) can of lentils may be used to save time - (rinse and drain before using)
2 to 3 servings

Directions:
1. Place lentils, celery, red pepper, garlic, walnuts, mint, and lemon zest in a bowl.
2. Drizzle olive oil over salad ingredients, salt and pepper to taste and toss well.

** Serve salad on mixed salad greens with a warm bowl of vegetable soup.
** Serve this quick salad with warm rolls and your favorite spread along with some apple slices.
** Serve salad on a bed of cooked, warm couscous with warm garlic bread slices.
