Sun-Dried Tomato
Millet Salad




I love this millet salad because it's packed with flavor and so easy to make. It's a perfect side dish but can also be served as a main dish for a light meal for lunch or dinner.

Ingredients:
2 cups - cooked millet
1/4 cup - sun-dried tomatoes in oil, drained and chopped
1/2 cup - red radish, half-moon slices
1/2 cup - frozen peas, thawed
2 tbsp - lemon juice
1 tbsp - olive oil
1 tbsp - fresh mint, chopped


Make Ahead:
- prepare 2 cups of millet
- thaw the peas


2 to 3 servings

Directions:

1. Prepare millet and place in a bowl with the rest of the ingredients, toss well to combine. Salt and pepper to taste.

Menu Planner:

** Serve this easy salad with steamed green beans and mushrooms tossed with a little lemon juice, soy sauce, and a sprinkling of sesame seeds.

** For a heavier meal, serve this simple salad along with a broiled salmon steak topped with a squeeze of lemon and a sprinkling of fresh or dried dill.

Ingredient Exchanges:

*Instead of Red Radish: try Leeks or Red Onion - for a spicier version, try adding a bit of chopped Jalapeno Pepper to taste

*Instead of Peas: try Shredded Carrots or Corn Kernels or very
thinly sliced Fennel
