Marinated Lettuce Salad

A quick and flavorful marinated lettuce salad with seasoned tomatoes, cucumbers, peppers, onion, and goat cheese. The longer the salad is allowed to marinate the more concentrated the flavors become. It's a rich tasting lettuce salad with just a few ingredients and easy preparation.

2-3 servings

6 Ingredients Needed:

lettuce greens – 6 cups
(washed, dried and torn into small pieces)

Italian style canned diced tomatoes – 1 (14.5 oz) can – drained

cucumbers – 1 cup diced

bottled jalapeno pepper slices – 1 tbsp (or to taste) – roughly chopped

red onion – 1 tbsp diced

* fresh goat cheese – 1/4 cup crumbled

*Quick Tip to Reduce Fat: Use a low-fat or fat free goat cheese when preparing salad.

1. In a mixing bowl, combine all the ingredients and mix thoroughly.

2. Allow salad to marinate for at least one hour, preferably more, tossing occasionally.

The lettuce will wilt down the longer it marinates.

If you prefer, you can substitute shredded cabbage for half the lettuce amount. This will give the salad a bit more crunch.

Turn this lettuce salad into a marinated chicken salad quickly and easily.

Marinated Grilled Chicken Salad


Grilled Chicken -            Place cubed chicken and marinated
 3 cups cubed                lettuce salad in a bowl and toss
                             to combine well.  Serve salad with
Shredded Cheese              melted cheese toasts.
 (your choice)
                             To make the cheese toasts, cut
French Bread                 the bread into thick slices and
 (cut into thick             sprinkle the cheese on top of 
  slices)                    each slice and either microwave
                             or broil until cheese melts.
                             
                                                Serves 3-4



Snack Idea:
** Serve marinated lettuce salad scooped into artichoke bottoms with whole grain crackers on the side.

Quick Lunch Idea:
** Serve this quick lettuce salad as a filling for a tortilla wrap sandwich and top off with avocado slices, sprouts and sour cream. Serve baked sweet potato chips on the side.

Quick Dinner Idea:
** This quick salad can also be served on a bed of cold cooked udon or soba noodles or rice noodles with store bought cooked cold shrimp placed on top of the marinated salad. This makes a fast and delicious meal.
