Our mandarin almond chicken salad requires only four ingredients. Chicken with mandarin oranges, leeks and crunchy almonds create this delicious and fast chicken salad in no time.

You can easily serve this chicken salad recipe as a main entrée. See the menu planner below for some quick meal ideas.


2-3 servings (as a main dish)

4 Ingredients Needed:

chicken – 2 cups cooked and diced

canned mandarin oranges in light syrup – 1 cup drained
(you may cut each section in half or leave whole as you prefer)
(reserve juice for dressing)

leeks – 1/2 cup thinly sliced half-moons
(be sure to thoroughly clean, making sure
that all the dirt is removed)

sliced almonds – 1/4 cup


For a creamier salad: Add any of the following to desired consistency.

Sour Cream or Yogurt or Mayonnaise

Make Ahead:
- If cooking your own chicken, prepare as desired and dice 2 cups

1. In a mixing bowl, combine the chicken, orange sections, leeks and almonds.

2. Drizzle on the reserved juice from the oranges and season with salt and pepper to taste.

Although lightly dressed, this salad is very flavorful.
