SUMMER VEGETABLE

Description:

A member of the legume family, lima beans grow in pods and are large and plump, resembling the shape of a kidney with a pale green color when young which fades to creamy yellow as they mature.

Selecting:

When selecting fresh beans, choose those that are plump and firm with pods that are dark green.

Avoid any that are pale in color or have pods that are shriveled.

Storing and Handling:

Store fresh unshelled beans in the refrigerator in a plastic bag for one week, at most.

Preparing:

Remove the stem end and then open the pod by pulling the string along the edge, then remove the beans. Boil fresh lima beans in enough water to cover until tender.

Serving Suggestions:

Succotash: Add pre-cooked lima beans to corn for a great side dish.

Grains: A great addition to quinoa, couscous, wild rice and brown rice. Simply add pre-cooked beans to cooked grain of choice and toss together.

Pasta: Add cooked beans to your favorite marinara sauce or even your favorite salsa for a quick topping for pasta.

Seasonings and Foods to use with Lima beans: bacon, cilantro, garlic, greens (chard, kale, mustard), ham, mustard, onions, poultry, salsa, seafood, thyme, tomatoes
