This low-fat lettuce salad recipe is ready in minutes.
Always choose the freshest salad greens and herbs, organic if possible. This healthy salad is your basic salad but has the flexibility to be made different every time.

Trying different lettuces and herbs and changing your dressing choice will create a new salad taste whenever you make it.

Use the addition suggestions below for some easy and delicious ways to add even more flavor to this healthy salad.

This lettuce salad recipe is a great side to any main entrée and can be made to serve more by simply doubling the ingredients.



2-3 servings

You will need 5 ingredients:

- 3 different types of salad greens
- 1 fresh herb
- Bottled Dressing (your favorite low-fat or fat free all natural brand)

Ingredients:

Choose 2 cups of any of the following
(washed, dried and torn into bite-size pieces)

Leaf Lettuce
Bib Lettuce
Baby Spinach Leaves

and

Choose 2 cups of any of the following
(washed, dried and torn into bite-size pieces for the lettuce and bok choy, shred the cabbage)

Romaine Lettuce
Green or Red Cabbage
Baby Bok Choy

and

Choose 2 cups of any of the following
(washed, dried and torn into bite-size pieces)

Radicchio Leaves
Watercress
Endive
Escarole

and

Choose 1/2 cup fresh of any of the following herbs
(washed, dried and chopped finely)

Fresh Dill
Fresh Basil
Fresh Cilantro
Fresh Chives

and

**Choose 1/2 cup of your favorite low-fat or fat free natural store bought dressing

** Instead of a bottled dressing, try one of our great salsas like pear crunch salsa, or apple carrot salsa.

You could also choose one of these simple and delicious dressings like berry cream dressing, Caesar salad dressing or Italian salad dressing.

They are all quick to make and add a different and flavorful taste to this simple lettuce salad recipe. Give them all a try.

1. In a mixing bowl, combine the lettuces and herbs.

2. Add the dressing you have chosen and toss salad well to combine.

Note: It is best to have all the greens and herbs well chilled before making the salad and put it together just before serving. This will keep the greens crisp and give you the best taste.

With a few additions you can give this lettuce salad a little more flavor and make it different every time. Try one or a combination of any of these:

Additions:
*Croutons – 3/4 cup or

*Roasted Nuts or Seeds (peanuts, walnuts, cashews, almonds or sunflower seeds) – 3/4 cup chopped or

*Dried Fruit (such as cranberries or apricots) – 1/2 cup chopped or

*Fresh Fruit – (apples, oranges, berries, melon) - 1/2 cup cut into bite size pieces or

*Meat, Fish, Poultry any cooked variety such as grilled steak, cooked shrimp, or barbecued chicken) – 1/2 to 1 cup cut into medium pieces or

*Cheese (sharp cheddar, cream cheese (cut into cubes), swiss, fontina, gouda, goat, or feta)- 1/2 to 1 cup cut into cubes, shredded or shaved
