Creamy Lentil Salad
This lentil salad is so easy to make and is a great blend of flavors from spicy scallions, creamy avocado and crunchy croutons. I love the taste of lentils and this is such a simple and delicious salad that requires ingredients that are usually on hand in my kitchen.
This is a great salad to serve any time you need a fast and easy meal. See below for some easy ideas to create meals in minutes using this creamy lentil salad.
2-3 Servings

5 Ingredients Needed:
cooked lentils - 1 1/2 cups
scallions - 1/2 cup diced
1/2 ripe avocado - cut into cubes
croutons - 2/3 cup (plain or flavored may be used)
red wine vinegar - as desired to moisten the salad
Make Ahead:
- 1 1/2 cups cooked lentils
(1 (15oz) can of lentils may be used to save time -
(rinse and drain before using)

1. Place all the salad ingredients in a bowl and toss well to combine. Adjust the vinegar to taste.
2. Season with salt and pepper to taste and toss again.

** Pasta Meal:
• Serve Salad: scooped into red cabbage leaves
• Side Dish: warm cooked couscous seasoned with olive oil, lemon juice, and lemon pepper or
• Serve Salad: over warm, cooked pasta (rotini, farfalle or macaroni) or noodles (rice, udon or egg noodles)
• Side Dish: steamed vegetables of choice
** Salad with Bread:
• Serve Salad: over thick slices of tomatoes sprinkled with a little salt and pepper and shaved parmesan cheese

• Serve Salad: in bowls lined with mixed salad greens
• Side Dish: a warm bowl of vegetable, chicken or tomato soup or a cold soup like gazpacho (this makes a quick and light summer meal)
