Lemony Zing Salsa

cucumbers – 1/2 cup diced
red onion – 1/2 cup diced
celery – 1 cup diced
fresh goat cheese – 1/2 cup crumbled
lemon juice – 2 tbsp freshly squeezed
lemon zest – 1 tsp
Olive oil – to taste
