Lemon Drenched Zucchini
Chicken Salad

A quick and easy recipe, lemon drenched zucchini chicken salad is filled with the great taste of chicken, lemon, garlic and more. An easy salad with few ingredients and packed with amazing flavor.

This salad makes a delicious meal when served in avocado halves. See the fast menu planner below for some simple ideas for quick meals.

3-4 servings (for a main meal)

5 Ingredients Needed:

chicken – 3 cups cooked, cooled and cubed

zucchini – 2 medium, each one quartered and diced

lemon – 1 medium unwaxed, the juice and zest
(use an unwaxed and organic (if possible) lemon since you will be using the outer skin to zest the lemon)

sliced almonds – 1/2 cup

garlic oil – 3 tbsp

Make Ahead:
- If cooking your own chicken, prepare as desired (grilled chicken adds even more flavor),cool and cube 3 cups

1. In a mixing bowl, combine the chicken and the zucchini.

2. Thoroughly clean the lemon and dry. With a grater, grate the zest of the entire lemon, making sure to stop at the white part (the pith – which is bitter), and add to the bowl.

3. Now juice the entire lemon into the bowl and toss all ingredients thoroughly until well combined.

4. Marinate the chicken and the zucchini with the lemon for 30 minutes.

5. After 30 minutes, add the almonds and the garlic oil and toss again to mix completely.

6. Season with salt and pepper to taste.

Optionally, you can add 1/4 tsp of dried rosemary or tarragon for extra flavor.
