German Potato Salad

Our German potato salad is a great potato salad that’s filled with strong, rich flavors. Red skinned potatoes with an oil and vinegar dressing and smoky bacon all combine to create a deep flavored German potato salad that’s quick and easy and always good.

This simple and flavorful potato salad tastes best warm when the flavors are at their peak.

6 Ingredients Needed:

4-5 small red skinned potatoes – quartered
(boil potatoes for approximately 10 minutes or until tender)

red onion – 1/2 cup medium chop

apple cider vinegar – 2 tbsp

olive oil – 1 tbsp

*turkey bacon – 2 slices cooked plus the drippings

fresh parsley – 2 tbsp minced


* For a vegetarian version, choose vegetarian style bacon.

1. In a skillet, prepare the bacon and cook until done.

2. Remove bacon from pan to drain on paper towels. Save the pan drippings.

3. Cook potatoes until tender, drain and add to a large mixing bowl along with the onion.

4. In a small bowl, combine the vinegar, olive oil and the bacon drippings. Whisk together until you have a well combined dressing.

5. Add the dressing to the potatoes and onion. Toss to combine.

6. Crumble the cooked bacon and add to potatoes and onions along with the parsley and salt and pepper to taste. Toss again until everything is well coated.

Serve potato salad immediately.

Note: For a little more spice add 1/2 to 1 tbsp of Dijon mustard.
