4 Ingredients Needed: 1 (15oz)can garbanzo beans (rinsed and drained) 1 (10.5oz) can mandarin oranges (drained - reserve liquid for dressing) 1/2 cup fresh parsley (coarsely chopped - wash and pat dry before chopping) low-fat vinaigrette to desired moistness (choose your favorite natural store-bought brand) (you may also add a little of the reserved mandarin orange juice to dress the salad) 2. Drizzle on the vinaigrette and the reserved juice from the oranges, if using. Use as much or as little as you desire to moisten the salad. 3. Allow salad to marinate in the refrigerator for at least an hour to develop the flavors. Main Meal Ideas: Lemony Rice with Garbanzo Bean Salad
Lemon Rice
2 cups water In a medium saucepan, combine the
water, rice and lemon peel. Bring
1 cup brown rice to a boil. Lower heat to a simmer,
rinsed under cover and cook for 30 to 40 minutes
