These easy Fruit Salads are simple to make and are perfect for a quick breakfast, simple light lunch or mini-meal, a great snack or a flavorful dessert. These quick recipes are so easy to put together and are a healthy addition to your meal choices.

Cranberry Apple Salad

2 cups diced apples
1 cup diced celery
1/2 cup cubed avocado
2 tbsp cashew pieces
1 tbsp dried cranberries (these can be softened in a
little warm water if desired)

- Combine all ingredients in a bowl and toss well.

Make a great seafood meal by simply adding some grilled or broiled salmon to this fruit salad or serve over a grilled fillet along with some steamed broccoli drizzled with a little lemon juice on the side.

Creamy Banana Salad

2 bananas sliced
1 cup sliced strawberries
6 pitted dates cut into pieces
3 tbsp toasted or plain coconut
3/4 cup vanilla or plain low-fat yogurt
1 tsp ground cinnamon

- Place the fruit and coconut into a bowl.

- In a smaller bowl, combine the yogurt and cinnamon.

- Add the yogurt mixture to the fruit and toss well to combine.

Nutty Orange Salad

2 large navel oranges – peeled, pith removed, sectioned (cut each section in half)
1 cup steamed beets – cut into bite-size chunks
2 tbsp sliced almonds
olive oil - to taste
fresh ground black pepper - to taste

- Place the oranges, beets and almonds in a bowl.

- Drizzle olive oil and grind pepper over the salad ingredients and toss well to combine.

Simple Lunch or Brunch Meal:

Serve this easy salad scooped into bibb lettuce leaves and top with a dollop of low-fat sour cream. Add a bowl of your favorite soup or slices of cheese on whole grain crackers on the side.

Add 4 to 6 oz of shelled, cooked and chilled shrimp cut into chunks to this salad. Serve salad on chilled plates lined with romaine lettuce leaves along with warm bread sticks on the side.

2 medium pears – cut into cubes
1 cup chayote squash – medium dice
1 apple – cut into cubes
4 oz brie cheese – cubed


- Combine all ingredients in a bowl and toss well.

2 cups green or red seedless grapes – halved
1 cup shredded green cabbage
1/2 cup sharp cheddar cheese – cubed

- In a bowl combine the grapes, cabbage and cheese cubes.

- Drizzle oil over salad ingredients and grind as much pepper over salad as desired. Toss to combine well.

Honey Peach Salad

2 cups sliced peaches
1 cup sliced pears
3/4 to 1 cup plain or vanilla low-fat yogurt
2 tbsp chopped walnuts
honey - to taste

Quick Meal Ideas:

Fruit Parfait:

In a parfait glass or a dessert bowl, layer each ingredient. Place a layer of peaches and pears on bottom of glass or bowl, then a layer of yogurt, then some walnut pieces and then a drizzle of honey. Continue this way until you have used all the ingredients.

Fruit Salad:

Place the peaches, pears and walnuts in a mixing bowl. Add the yogurt and drizzle the honey over the ingredients as desired. Toss gently to combine. Serve salad on mixed salad greens along with a side of crackers spread with mustard and topped with thin slices of baked ham.

Honey Peach Waffle Topper:

Combine all the ingredients in a bowl. Toast two frozen plain waffles and serve this creamy salad over the top of each waffle.
