Fruit Salad with Lemony Avocado Cream
A great tasting fruit salad made with a combination of sweet and creamy flavors. Juicy mandarin oranges and crisp apples layered in creamy avocado with a lemony twist and smooth yogurt makes a quick and delicious salad.

5 Ingredients Needed:
mandarin oranges – 1 (10.5 oz) can – drained
apple – 1 small apple diced and tossed with lemon juice
avocado – 1 medium avocado (stone removed and peeled)
fresh squeezed lemon juice – 1 to 2 tbsp
plain low-fat yogurt – 1 (8 oz) container

1. Drain the orange segments and place in a bowl.
2. Prepare the apples and place in another bowl.
3. To make the avocado cream, place the avocado and the lemon juice in a mixing bowl, mashing and stirring the two ingredients together until the avocado becomes smooth and velvety.

Quick Meals - Menu Planner:
** Layered Salad: Serve salad layered in parfait glasses (you can use wine glasses as well). Place a layer of orange segments on the bottom of the glass, followed by the avocado cream, then a layer of apples and then yogurt. Continue until you have used all the ingredients. Add some cinnamon graham crackers or cinnamon pita chips on the side.
** An Arranged Salad: Serve this creamy fruit recipe as follows: Instead of dicing the apples, slice them and arrange the slices and orange segments in a circle on a bed of lettuce greens on each plate. Then divide the yogurt and place in the center of each plate followed on top with a scoop of the avocado cream. Serve warm rolls or flatbread with soft butter or a cream cheese spread.
** A Simple Fruit Dessert: Serve this quick salad on a bed of bibb leaf lettuce along with lemon and/or gingersnap cookies.
