SPRING VEGETABLE

Description:

Fava beans are the edible pods of the Vicia faba plant, an annual Old World plant. Fava beans are also known as broad beans, horse beans and field beans. The beans are encased in a leathery type pod that is green when young, maturing to a blackish-brown.

Selecting:

Fava beans are sold fresh, dried and canned. When selecting fresh beans, look for fresh, crisp pods (avoid any wilted pods),with beans that are shiny and smooth.

Storing and Handling:

Fresh fava beans will keep in the refrigerator for about a week. Dried fava beans, if kept in an airtight glass or ceramic container, will last for about a year.

Preparing:

Boiling: for fresh fava beans, remove beans from pod, blanch before cooking and remove the tough outer skin. After skin has been removed, boil for approximately 10-15 minutes, testing for doneness after 10 minutes.

Serving Suggestions:

Casseroles and Stews: fava beans are a great addition to any casserole or stew.

Side Dishes: simply boil until tender, then dress with olive oil, fresh garlic, salt and red pepper.

Seasonings to use with Fava Beans: onions, garlic, mint, red pepper flakes, olive oil
