Apple Goat Cheese Salad
• 2 cups apples – thinly sliced • 1 cup plums – pitted and cut into bite-size pieces • 1 cup shredded chayote squash • 1 cup packaged shredded cabbage • 1/2 cup crumbled goat cheese • 1 to 2 tbsp fresh squeezed lemon juice
Step 1: Place prepared apples, plums, squash, and cabbage in a bowl. Step 2: Pour the lemon juice over the fruit and vegetables and toss to coat completely. Step 3: Add the goat cheese and season with some fresh ground black pepper if desired and toss to combine again.

- Serve this flavorful and simple salad on romaine or leaf lettuce with avocado slices and breadsticks on the side.

Salmon and Cheese Salad
• 6 oz canned salmon (drained) or grilled salmon (flaked into small pieces) • 1/2 cup red onion - thinly sliced in half-moons • 1/2 cup chopped celery • 1/4 to 1/2 cup crumbled blue cheese • 1 tbsp fresh parsley – roughly chopped • Fresh squeezed lemon juice – to taste
Step 1: In a bowl, combine salmon, onion, celery, cheese, and parsley. Step 2: Squeeze lemon juice over salad and toss well.
Optional Additions: Try adding some crumbled crispy, cooked bacon, seasoned croutons, or pine nuts

- Serve salad on cold cooked pasta, on French bread slices or on a bed of crisp salad greens with sliced tomatoes and cucumbers tossed with salt, pepper and fresh basil on the side.

Garlic Rice Salad
• 2 cups cooked brown rice • 1 cup brussel sprouts – quartered and steamed until tender • 1/2 cup shredded carrots • 2 tbsp pine nuts • Garlic oil – to taste
Step 1: In a bowl, combine the rice, brussel sprouts, carrots, and pine nuts. Step 2: Drizzle the garlic oil over the salad ingredients along with some salt and lemon pepper and toss well, adjusting to taste.

- Serve this quick salad along with grilled steak for a simple and easy dinner.
- Another quick fall meal idea is to serve this salad on a bed of steamed greens (spinach, chard, or kale) along with a bowl of warm vegetable soup.

Broiled Eggplant Salad
• 1 medium sized eggplant • 1 cup canned Italian style tomatoes - drained • 1/4 cup crumbled feta cheese • Romaine lettuce
Step 1: Wash, peel, and slice eggplant into 1/2" thick slices. Step 2: Brush each eggplant slice on both sides with olive oil and season as desired. Step 3: Place slices on a broiler rack about 5 inches from the heat source and broil until browned on each side. Watch carefully so they do not burn. Step 4: Allow eggplant to cool. When cooled, cut slices into bite-sized pieces and add to a mixing bowl along with the drained tomatoes and the feta cheese and toss to combine. Step 5: Serve salad on top of romaine lettuce leaves.

- Serve this fall salad along with some grilled chicken.
- You could also serve this salad with a bowl of cooked, warm wild or basmati rice seasoned with a little lemon juice, olive oil and chopped fresh cilantro.

Lemon Chicken Salad
• 2 cups cooked chicken – cubed • 3 cups baby spinach • 1 sweet potato - cubed and steamed until tender • 2 tbsp sliced almonds • 2 tbsp fresh squeezed lemon juice • 1 tbsp garlic oil
Step 1: Combine chicken, spinach, potato, and almonds in a bowl. Step 2: In a separate bowl or jar with lid, combine lemon juice and oil completely. Step 3: Pour dressing over salad ingredients and toss well.
