Easy Fall Meal Ideas



Here are some quick and easy fall salads using the great tastes of fall produce. There are autumn fruit salads that are perfect for dessert plus terrific pasta, rice, and chicken salads made with flavorful combinations of fresh fall fruits and vegetables.

Apple Goat Cheese Salad


• 2 cups apples – thinly sliced
• 1 cup plums – pitted and cut into bite-size pieces
• 1 cup shredded chayote squash
• 1 cup packaged shredded cabbage
• 1/2 cup crumbled goat cheese
• 1 to 2 tbsp fresh squeezed lemon juice

Step 1: Place prepared apples, plums, squash, and cabbage in a bowl.
Step 2: Pour the lemon juice over the fruit and vegetables and toss to coat completely.
Step 3: Add the goat cheese and season with some fresh ground black pepper if desired and toss to combine again.

Quick Meal Idea:

- Serve this flavorful and simple salad on romaine or leaf lettuce with avocado slices and breadsticks on the side.

Salmon and Cheese Salad


• 6 oz canned salmon (drained) or grilled salmon (flaked into small pieces)
• 1/2 cup red onion - thinly sliced in half-moons
• 1/2 cup chopped celery
• 1/4 to 1/2 cup crumbled blue cheese
• 1 tbsp fresh parsley – roughly chopped
• Fresh squeezed lemon juice – to taste

Step 1: In a bowl, combine salmon, onion, celery, cheese, and parsley.
Step 2: Squeeze lemon juice over salad and toss well.

Optional Additions: Try adding some crumbled crispy, cooked bacon, seasoned croutons, or pine nuts

Quick Meal Idea:

- Serve salad on cold cooked pasta, on French bread slices or on a bed of crisp salad greens with sliced tomatoes and cucumbers tossed with salt, pepper and fresh basil on the side.

Garlic Rice Salad


• 2 cups cooked brown rice
• 1 cup brussel sprouts – quartered and steamed until tender
• 1/2 cup shredded carrots
• 2 tbsp pine nuts
• Garlic oil – to taste

Step 1: In a bowl, combine the rice, brussel sprouts, carrots, and pine nuts.
Step 2: Drizzle the garlic oil over the salad ingredients along with some salt and lemon pepper and toss well, adjusting to taste.

Quick Meal Ideas:

- Serve this quick salad along with grilled steak for a simple and easy dinner.

- Another quick fall meal idea is to serve this salad on a bed of steamed greens (spinach, chard, or kale) along with a bowl of warm vegetable soup.

Broiled Eggplant Salad


• 1 medium sized eggplant
• 1 cup canned Italian style tomatoes - drained
• 1/4 cup crumbled feta cheese
• Romaine lettuce

Step 1: Wash, peel, and slice eggplant into 1/2" thick slices.
Step 2: Brush each eggplant slice on both sides with olive oil and season as desired.
Step 3: Place slices on a broiler rack about 5 inches from the heat source and broil until browned on each side. Watch carefully so they do not burn.
Step 4: Allow eggplant to cool. When cooled, cut slices into bite-sized pieces and add to a mixing bowl along with the drained tomatoes and the feta cheese and toss to combine.
Step 5: Serve salad on top of romaine lettuce leaves.

Quick Meal Ideas:

- Serve this fall salad along with some grilled chicken.

- You could also serve this salad with a bowl of cooked, warm wild or basmati rice seasoned with a little lemon juice, olive oil and chopped fresh cilantro.

Lemon Chicken Salad


• 2 cups cooked chicken – cubed
• 3 cups baby spinach
• 1 sweet potato - cubed and steamed until tender
• 2 tbsp sliced almonds
• 2 tbsp fresh squeezed lemon juice
• 1 tbsp garlic oil

Step 1: Combine chicken, spinach, potato, and almonds in a bowl.
Step 2: In a separate bowl or jar with lid, combine lemon juice and oil completely.
Step 3: Pour dressing over salad ingredients and toss well.

Quick Meal Idea:

- Serve this fall salad over slices of avocado with a small side of warm black beans tossed with cumin and chopped tomatoes and some warm cheese breadsticks on the side.
