Couscous Fennel Salad
• 2 cups cooked couscous • 3/4 cup thinly sliced fennel • 1/2 cup packaged coleslaw mix • 1/4 cup pitted black olives - chopped • 2 tbsp fresh squeezed lemon juice • 1 tbsp olive oil
Step 1: In a bowl, combine the couscous, fennel, coleslaw, and olives. Toss to combine. Step 2: In a small bowl or jar with lid, add the lemon juice and olive. Combine completely. Step 3: Add dressing to salad and toss well. Season with salt and pepper to taste.

Roasted Pepper Chicken Salad
• 2 cups grilled chicken - cubed • 1 cup butternut squash – skin removed, cubed, and cooked (steamed until tender) • 1/2 cup roasted red peppers – roughly chopped • Olive oil – to taste • Dried rosemary – to taste
Step 1: Place the chicken, squash, and peppers in a mixing bowl. Step 2: Drizzle on the olive oil and sprinkle with the rosemary, start with about 1/4 tsp. Step 3: Toss salad carefully so as not to break down the squash pieces too much. Adjust oil and rosemary to taste. Salt and pepper, if desired.

• 1 large pear - remove core and cut into cubes • 8 thin slices of prosciutto – cut into bite-size pieces • 2 tbsp walnut pieces • 5 cups assorted salad greens • Bottled vinaigrette dressing
Step 1: In a mixing bowl, place the cubed pear, prosciutto, walnut pieces, and the salad greens. Step 2: Pour the dressing over the ingredients, just enough to moisten, and toss well. Step 3: Season to taste with a little fresh ground black pepper.

Step 1: Take two parfait glasses or two wine glasses and place a layer of raspberries on the bottom of each glass. Step 2: Now place a layer of yogurt on top of the raspberries then sprinkle on some chocolate chips. Step 3: Next place a layer of pear pieces in each glass, then yogurt, then chocolate chips. • 2 cups cooked rotini pasta • 1 cup butternut squash – skin removed, cubed, and cooked (steamed until tender) • 1/2 to 3/4 cup bottled marinara sauce – your choice • 2 tbsp walnut pieces • 2 tbsp fresh grated parmesan cheese
